About UsCan you believe it is the week of Christmas?? Somehow December always flies right by for me – especially this year with a baby and trying to make sure I’ve done all my favorite Christmas traditions!
Maybe you just realized that you need to bring some cookies to a Christmas party this week. You need something quick, easy, AND delicious. Skip the craziness at the grocery stores, and stop on by our little store. We have everything you need to make a great batch of Ginger-Doodle Cookies!
Let’s get baking!
First off, preheat your oven to 350 degrees. You can also get two baking sheets ready and line them with parchment paper. Once that is done, whisk together your egg, butter, and brown sugar until smooth. I used John F Martin Salted Butter, Alderfer Pastured Organic Eggs, and Woodstock Organic Brown Sugar all of which you can get at the Old Dutch Cupboard!
Stir in the mix until the dough comes together nicely. The mix that is used is the New Hope Mills Gingerbread Pancake Mix. Did you know there are many different things you can make with a pancake mix? 🙂
Mix together the cinnamon and sugar. I used Frontier Co-op Organic Ceylon Cinnamon and the Organic Cane Sugar.
Form the dough into 1 inch balls and roll in the cinnamon sugar mixture.
Bake for 10-12 minutes.
And there you have it – delicious cookies to take to your holiday dinner this week! This batch made about a dozen and a half cookies. There is enough mix though that you can make a second batch (like I did!!) or you can make the delicious pancake recipe that’s listed too!
