About UsIt’s time for another baking post! This recipe has been a childhood favorite of mine. Chocolate Chip Pumpkin Muffins are so easy to bake. They are delicious for just snacking around your house or for taking to a holiday party. Just keep in mind – if you bring them to a party, you are going to have to keep bringing them 😉 A favorite for sure!
Let’s get started! Preheat your oven to 350 degrees. Cream together your eggs and sugar. Then add in the pumpkin and oil until well mixed. I used the Alderfer Organic Pastured Eggs, Organic Cane Sugar, Organic Pumpkin, and Sunflower Oil – all of which you can get at the Old Dutch Cupboard!
Combine together your flour, cinnamon, salt, and baking soda. Again, all these items can be purchased at the store. How convenient! This recipe is great especially as you can stop by, pick up ALL your ingredients at one place, and make them if you need something last minute. Combine the flour mixture to the pumpkin mixture until well mixed.
Now for my favorite part – mix in those chocolate chips! I use mini chocolate chips because I love making these muffins in my mini muffin tin. Plus, you get lots of chocolate in each bite.
Spray your muffin tin of choice! Like I mentioned, I prefer the mini muffins because they are bite sized and perfect! But you can easily use the recipe for regular muffin size as well. Bake in your preheated oven for 12-15 minutes, or until the toothpick comes out clean. This recipe makes A LOT of mini muffins. Roughly around 6 dozen.
