About UsIn case you haven’t realized, our New Hope Mill Pancake mixes can be used in lots of different ways and not just as pancakes or waffles! Today we are going to use the new Blueberry Pancake Mix and make some yummy Blueberry Muffins. These muffins are great for an easy breakfast or yummy mid-day snack!
To get started, preheat your oven to 350 degrees and grease your muffin pan. This recipe will make 24 muffins and will use most of your pancake mix, so if you want to pancake mix left over, you can cut this recipe in half!
Combine your dry ingredients together – 4 cups of New Hope Mills Blueberry Pancake Mix and 2/3 cup of cane sugar.
Combine your wet ingredients together – 1 1/2 cups of Trickling Springs Organic Whole Milk, 1 cup of melted butter, and 4 Alderfer Eggs, lightly beaten.
Pour wet mixture into dry mixture and stir until combined.
Evenly divide mixture into 24 muffins. Place into preheated oven and bake for 20 minutes, or until lightly golden brown on top.
These muffins are best enjoyed warmed up with some butter! And I hope you and your families enjoy!
