We are kicking this off with a fall recipe. I don’t know about you, but fall has me thinking about all things APPLE and I usually have a couple apples sitting on my counter begging to be used.
This Sausage Apple Bake is inspired from New Hope Mills and their Apple Cinnamon Pancake Mix. Why settle with something ordinary when you can combine the fall flavors of apple and cinnamon into a delicious bake? This bake would be a great breakfast dish either to enjoy at home with your kids on a lazy Saturday or to take up to the cabin for a weekend getaway. Personally, I made it for a weekday lunch when my husband happened to be home from the truck. The possibilities are endless.
Let’s get started! To start, brown your sausage in a skillet over medium heat. Once cooked, cut it up into pieces. I used the 12 oz package of John F Martin breakfast sausage that we have in our freezer at the Old Dutch, but you can use any sausage that we have there! As you are cooking your sausage, preheat your oven to 350 degrees.
Next, you will want to combine the pancake mix and brown sugar. Stir in 3/4 sausage pieces and 3/4 diced apples. **Side note – since the recipe only calls for 2 cups of the mix, you can use the mix that’s leftover to make some yummy apple cinnamon pancakes. Win win!
Using a spatula, mix in remaining ingredients of eggs, milk, butter, and vanilla. All of these items can be purchased at the store! I used Alderfer Pastured Organic Eggs and Swiss Villa Raw Milk for this recipe.
When your batter is ready, grease an 8×8 pan. Top with remaining apples and sausage. Bake for 50-55 minutes, or until the toothpick comes out clean. Let sit for 10 minutes before serving.
And there you go! Top with our PA Miller’s Maple Syrup and serve with a glass of Bauman’s Apple Cider. I hope you enjoy this bake just like my family!
